Homemade granola

This homemade granola is good for or as a mid-morning snack. You can use other berries or nuts if you prefer. When sealed in an airtight container this granola should keep for up to a month.

What you will need:

  • 1 tablespoon olive oil
  • 40 g brazil nuts, chopped
  • 20 g almonds, chopped
  • 80 g rolled oats
  • 1 tablespoon honey or maple syrup (or 1/2 a tablespoon of each)
  • 40 g dried apricots, chopped
  • 30 g dried cranberries 
  • 30 g dried mixed seeds (e.g. pumpkin and sunflower)
  • Optional ingredients
  • 1–2 drops of vanilla essence

Method:

1. Pre-heat the oven

  • 150oC for a conventional oven or 130oC for a fan oven
  • Lightly oil a non-stick baking tray

2. Chop and mix the ingredients

  • Chop the nuts and place with the rolled oats in a mixing bowl
  • Add the vanilla essence if using
  • Add in the honey or maple syrup and mix

3. Bake for 20–30 min

  • Spread the mixture over the baking tray, cook for 10–15 min
  • Remove from oven and mix in the dried fruit and seeds
  • Bake for another 10–15 min
  • Remove and allow to cool.
  • Scrape the cooled granola into an airtight container

4. How to serve

  • Serve with soya yogurt or cold milk
