Porridge with blueberry compote

This simple dish can be made in advance and re-heated when needed. The compote can also be made with raspberries in place of blueberries. Use soya milk ideally, adding more milk if a thinner porridge is preferred.

What you will need:

  • For the porridge
  • 50 g porridge oats
  • 250 ml milk
  • Honey to taste (optional)
  • For the compote 
  • 80 g blueberries, fresh or frozen
  • 50 ml pomegranate or cranberry juice
  • Honey to taste (optional)

Method:

1. Make the compote

  • Place the fruit and fruit juice in a saucepan and bring to the boil
  • Reduce the heat and simmer for 5–10 min or until the liquid has reduced
  • Remove from the heat and stir in a little honey to sweeten

2. Make the porridge

  • Put the oats and milk into a heatproof serving bowl and stir. 
  • Microwave according to package instructions (e.g. on full power for around 2 min, stir, cook for another 1 min, leave to stand for 1 minute) 

3. How to serve

  • Stir in a little honey to sweeten and add more milk if needed
  • Place the compote on top
