Red lentil soup

This is a simple soup that is great for lunch. If you like a spicier soup, add in some chilli flakes. If you prefer a smoother soup, use a hand blender.

What you will need:

  • 1 tablespoon olive oil
  • 1/2 small white onion
  • 1/2 stick of celery
  • 1 small carrot
  • 60g red lentils
  • 500 ml water or vegetable stock
  • 1 bay leaf
  • Salt and pepper

Method:

1. Prepare the ingredients

  • Peel and dice the onion and carrot
  • Wash and dice the celery
  • Rinse the lentils in a sieve

2. To make the soup

  • Heat the olive oil in a pan and cook the onion, celery and carrot for about 4–5 min
  • Add the water or stock, lentils and season
  • Bring to the boil then turn down the heat to simmer for 30 min or until the lentils are soft and have absorbed most of the liquid

3. Blend, reheat and serve

  • Remove from the heat and cool before using a hand blender to create a smooth soup (optional)
  • Warm when ready to eat
