Steamed sea bass with ginger and chilli

This is a simple fish dish that can be served with brown or cauliflower rice. Omit the chilli if you do not like, or are intolerant, to spicy food.

What you will need:

  • 2 sea bass fillets 
  • 1-inch piece of fresh ginger
  • 1 red chill
  • 2–3 spring onions
  • 1/2 tablespoon olive oil
  • 1/2 tablespoon soy sauce

Method:

1. Prepare the fish

  • Wash and descale the fish
  • Cut the skin diagonally a few times and place, skin side down, in a steamer pan
  • Season with salt and pepper

2. Prepare the other ingredients

  • Peel and chop the ginger into fine matchsticks
  • Peel and thinly slice the garlic
  • Cut the chilli finely
  • Cut the ends of the spring onions, remove the outer leaves, chop 1/3 off the top and the remaining green and white parts into 1 cm diagonal pieces

3. Add to the fix and steam

  • Add the chopped ingredients plus soy sauce to the pan with the fish
  • Steam for 5–8 min or until the fish is cooked
