Broccoli, feta and pea frittata

Frittatas can be made using a variety of ingredients and can be eaten hot or cold for breakfast, lunch or as part of an evening meal. You can use freshly grated parmesan or cheddar cheese if preferred.

What you will need:

  • 1 teaspoon olive oil
  • 2 large eggs
  • 60 ml water
  • 200 g broccoli
  • 25 g peas, fresh or frozen
  • 25 g feta cheese
  • 2 sprigs fresh parsley (optional)
  • Salt and pepper

Method:

1. Pre-heat the oven

  • 180oC for a conventional oven or 160oC for a fan oven

2. Prepare the ingredients

  • Beat the eggs, gradually add in the water
  • Wash and steam the broccoli for 4–5 min until just cooked; break into small pieces
  • Wash and cook the peas 
  • Chop the feta cheese into small squares

3. Combine and cook

  • Add the vegetables and cheese to the egg mix, stir and season
  • Pour the mix into a heat-proof dish and bake in the oven for 20 min or until lightly browned and the frittata is springy to the touch

4. How to serve

  • Serve with a salad and fresh parsley on top
